How to Sharpen Blade on Bizerba Slicer

To keep your Bizerba slicer in optimal condition, it is recommended to sharpen the blade daily. This simple maintenance step ensures precise cuts for meat and cheese.

1) Remove the cutting tray completely from the Bizerba slicer. Use the crank located near the slicer's base to move the tray on the left side of the blade to its widest position. This tray is typically used to control the thickness of the cuts.

2) Examine the blade sharpener on the underside of the Bizerba slicer. Take note of the two wheels positioned at specific angles. On the top of the sharpener, you'll find a silver metal bar extending downwards.

3) Place the bent bar of the sharpener over the top of the thickness tray, ensuring that the wheels are against the tray. Slide the sharpener towards the blade until you feel it click into place. The sharpener and the tray have corresponding notches that should align perfectly.

4) Tighten the sharpener against the thickness tray by turning the knob at the end of the bent bar. Give the sharpener a gentle wiggle to ensure it is secure and doesn't move.

5) Turn on the Bizerba slicer, causing the blade to start spinning. Adjust the grey knob located on the front of the sharpener, lowering it down to position 1. Allow the sharpener to run for 30 seconds, then briefly move the grey knob back up to position 2 for no more than three seconds.

6) Switch off the slicer and sharpener. Remove the sharpener from the slicer and store it away properly. Take a moment to carefully wipe down the slicer, removing any dust or residue left by the sharpener.
